Stella Nova is the new star in the Nova Skyland company family, a dining experience that is more than just a hotel restaurant. Stella Nova offers northern gastronomy, where food, art, ambience, and service come together to create a holistic experience for guests.
Gastronomy is the art and science of cooking and enjoying food. It encompasses a wide range of topics, including ingredient selection, cooking techniques, flavour combinations, and food culture.
KITCHEN
The kitchen’s concept is modern Nordic, combining the character of Nordic ingredients with classic French techniques. The restaurant offers guests familiar flavours but dishes are reimagined. The dishes are like works of art, surprising with their appearance, yet always containing recognizable elements in the flavour palette. This evokes taste memories and thoughts, allowing the dining experience to be seen in a new light. Stella Nova’s kitchen recipe is to combine the familiar and the new in just the right balance.
